Slow Cooked Pork Gammon

For a Delicious dinner for any occasion or even for a Sunday family meal the Pork Gammon won't disappoint you.

Preparation Time: 30'

Cooking Time: 150'

Serves: 4 portions

Ingredients

  • 1 pork gammon with 1.8-2 kg skin
  • salt
  • pepper
  • 350 ml. beer
  • 3-5 cloves of garlic
  • 4-6 bay leaves
  • 1 onion cut in half
  • 1 tbsp. rosemary

For the potatoes

  • 10 potatoes
  • fresh herbs
  • 1/3 cup olive oil
  • 2 tbsp. mustard
  • salt
  • pepper

Method

  • Remove the gammon from the refrigerator a few hours (2-6) before cooking. Carve the skin of the plait with a very sharp knife, taking care not to go deep and cut the meat itself. Smear the skin well with salt, almost as if you were massaging the pork for 3-4 minutes so that the salt penetrates all the cut points and comes in contact with fat and meat. Leave it with the salt for 40 'in your kitchen. In the meantime, preheat the oven to 180ºC (or at a lower temperature than 120º-160ºC if you choose slower cooking). Cut the onion in two or four and the garlic cloves. In a small bowl that evenly holds the stalk standing, place the stalk in the centre like a pyramid, pour in all the ingredients and then the beer to form the base.
  • Moisturizing element in the cooking process keeping the meat juicy and flavouring it along the way. Do not pour the beer over the meat, because it will carry away the garlic and salt and pepper that we want to keep in the folds. There is enough fat to keep the meat moist during baking, so the beer on it will not add anything.
  • You'd roughly expect it to be ready at 180ºC at 2:15 ', but, safe driver is the internal temperature to reach 80ºC and not the time. When the indoor temperature exceeds 80ºC, it is certain that the interior is fully cooked, so you take the gammon out of the oven. If it does not have a skin, the process ends here. If it has skin, raise the oven to 260ºC. You will notice that the skin has been 'cooked' to a great extent, but it is clearly chewy and therefore impossible to eat in this form.
  • Put all the ingredients for the potatoes in a pan and mix. Cover the pan and bake at 180 degrees for 40 minutes. Open and pour all the juice from the gammon on the potatoes and place it on top of the pan with the potatoes. Continue baking.
  • With a spoon and/or brush you take the beer that is in our utensil together with the herbs and smear well the skin and the whole gammon, so that it goes wet everywhere in the crevices and under the folds of the skin, to better complete the final phase where we will seek to make the skin crisp.
  • Because having liquid, the abrupt heating will create more bubbles than water vapour and so the skin will stretch and cook perfectly.
  • Finally, transfer the gammon on a grill with the pan underneath so that its skin is fully exposed to the high heat and there is a pan underneath to collect any liquids that will drip. When the oven reaches 260ºC, quickly put the gammon back in, so that there are no large heat losses.
  • Leave it for about 10 minutes until the skin is puffy and visibly crispy. Remove the bun from the oven and leave it on a cutting surface for at least 10 minutes before serving at the table to balance and re-integrate back into its tissues. , all liquids that have come out of them during cooking.

However, this is all irrelevant to Forrest who can only think of his childhood sweetheart Jenny Curran, who has messed up her life. Although in the end, all he wants to prove is that anyone can love anyone.

  • Tom Hanks as Forrest Gump
  • Michael Conner Humphreys as young Forrest Gump
  • Hanna R. Hall as young Jenny Curran.
  • Gary Sinise as Lieutenant Dan Taylor: Forrest and Bubba Blue's platoon leader
  • Mykelti Williamson as Benjamin Buford "Bubba" Blue
  • Sally Field as Mrs Gump

  • Peter Dobson as Elvis
  • Dick Cavett as himself
  • Sonny Shroyer as Coach Paul "Bear" Bryant
  • Grand L. Bush, Michael Jace, Conor Kennelly, and Teddy Lane Jr. as the Black Panthers

Our Review

From Winston Groome's book, Forrest Gump is transferred to the cinema in 1994. Speaking of a good, well-intentioned naive, and obedient, to one whose whole life revolves around a humble dream and a box of chocolates, character, the protagonist Tom Hans. In the film we see the hero meeting personalities such as Kennedy, Nixon or John Lennon. The essence of the film, symbolizes a person with reduced intelligence who does not ask, is not searched and above all does not react.

In addition, the Film Academy nominated Forrest Gump for thirteen Oscars, eventually awarding it six.

While watching this movie (as young girl) I drank homemade lemonade, which my mom used to make -since we had a lemon tree in our yard- so, when I put the movie to watch it again, recently before post it on our blog, what I felt was nostalgia for that icy homemade lemonade. So, somewhat emotionally affected by this memory, I suggest you watch or re-watch Forrest Gump with a glass of cold, fresh lemonade on your side and you'll remember me ;) ;)

The Help

Movie Plot

Set in Mississippi during the 1960s, Skeeter (Stone) is a southern society girl who returns from college determined to become a writer, but turns her friends' lives -- and a Mississippi town -- upside down when she decides to interview the black women who have spent their lives taking care of prominent southern families. Aibileen (Davis), Skeeter's best friend's housekeeper, is the first to open up -- to the dismay of her friends in the tight-knit black community. Despite Skeeter's life-long friendships hanging in the balance, she and Aibileen continue their collaboration and soon more women come forward to tell their stories -- and as it turns out, they have a lot to say. Along the way, unlikely friendships are forged and a new sisterhood emerges, but not before everyone in town has a thing or two to say themselves when they become unwittingly -- and unwillingly -- caught up in the changing times.

Cast

  • Emma Stone as Eugenia "Skeeter" Phelan
  • Viola Davis as Aibileen Clark
  • Octavia Spencer as Minny Jackson
  • Bryce Dallas Howard as Hillary "Hilly" Walters Holbrook
  • Jessica Chastain as Celia Rae Foote
  • Allison Janney as Charlotte Phelan
  • Ahna O'Reilly as Elizabeth Leefolt
  • Sissy Spacek as Mrs Walters
  • Chris Lowell as Stuart Whitworth
  • Mike Vogel as Jonathan "Johnny" Foote
  • Cicely Tyson as Constantine Bates
  • Anna Camp as Jolene French
  • Brian Kerwin as Robert Phelan

  • Leslie Jordan as Mr Blackly
  • David Oyelowo as Preacher Green
  • Dana Ivey as Grace Higginbotham
  • Tiffany Brouwer as Rebecca
  • Carol Lee as Pearly
  • Carol Sutton as Cora
  • Millicent Bolton as Callie
  • Ashley Johnson as Mary Beth Caldwell
  • Nelsan Ellis as Henry
  • Emma and Eleanor Henry as Mae Mobley Leefolt

Our Review

Kathryn Stockett's best-selling book, The Help, quickly gained success. After all, both the theme and the film itself have the right recipe, combining social reflection with well-written history.

The main characters are Skeeter and two maids: her favorite, Aibileen (Viola Davis) who resurrected her and the dynamic Minny (Octavia Spencer). These three women are at the heart of an attempt to demonstrate the irrationality of racial discrimination and the inhuman face of racism. "The Help" features carefully curated main characters, who are passionately played by the actors.

In "The Help", the balance between comedy and drama is never lost. Although Mississippi is inflamed by the hypocrisy and authoritarianism of the "superior" whites, giving us some genuinely moving scenes, the struggle of the black heroes to overcome fear and testify to their personal truth holds equally funny moments.

"The Help" manages to win and excite the audience. It talks about the past in a direct and timely way, while achieving the necessary connection with the present in the viewer's consciousness.

At this point and in a comedic spirit based on a historical scene of the film, we were inspired with our proposal for a Greek traditional dessert based on chocolate and biscuits. Anyone who has seen the film will understand our way of thinking, and whoever has not seen it, we believe will laugh and trust us. The proposal of the film as well as the proposal for the sweet tie harmoniously as it is worth seeing the film -if you haven't seen it before- accompanied by the sweet lychees that we suggest to you.

We wish you to enjoy both of our proposals.

Our Review

Julie and Julia are two very different women, but they have one delicious feature in common: cooking. One comes to us from the delicious Paris of the '50s and the American television reality of the' 60s, full of smiles, optimism and original recipes. She is none other than Julia Child, the famous chef in the country and TV personality played by Meryl Streep. For her, cooking and food are a way of life, part of everyday life and a source of her inexhaustible pleasure.

The other is Julie Powel (Amy Adams), a stressed woman living in Queens who is frustrated with her life, the September 11 injury in New York and her failed failures, and is permanently in a state of crisis and frustration. Cooking for her is a way out of everyday life, while Julia Child's recipes are a challenge for small everyday victories - both in her kitchen and in her blog. Julia's recipe book will prove to be an unexpected self-help guide for Julie, who will finally give a taste of her boring life.

It is a pleasant and romantic story of Julie and Julia. Inspired by two true stories, Ephron manages to convey to the viewer both the joy of cooking and the joy of blogging, but also the simple joy of eating, a more accessible pleasure that we have all more or less experienced during a well-cooked meal. An undeniably delicious romantic comedy that will open hearts and appetite of course.

We imagined ourselves somewhere in Franch eating of course a delicious creamy chicken, that we add bacon (which is an always delicious combination) and pasta to complete and easy, quick and tasty meal.

Bon appetit!

Our Review

Liz (Julia Roberts) is too close to depression. She is not sure about her feelings and her marriage does not help her at all, since she does not offer anything in her attempt to find herself. She decides to get a divorce and enter a new, more difficult phase in her life, the one that will allow her to fill this constant gap she feels. First step, the relationship with a younger man. The second and most important step, a journey around the world that will help her calm down and finally find the element that is missing from building her personal happiness. She first travels to Italy wanting to taste good food, carefree life and of course to join the local culture, then the spirituality of Indian culture and ends up in the idyllic Bali. In her attempt to discover the source of her authenticity, she witnesses various theories and practices that will lead her to self-awareness.

Perhaps the beginning and end of every human being revolves around self-knowledge. Elizabeth Gilbert's autobiographical story seeks to show the long and arduous need of self for love, right thinking and completion. Spiritual 'resurrection' is fundamental and necessary.

The film offers several thrills, accompanied by an exquisite journey into the diversity and magic of the world. The film has strong moments. Also, the film is part of a spiritual teaching that leaves no one indifferent ...

Many of us would like to make this journey. So, somewhere in here we were also upset by the taste that we would like to travel us, in some way to the places where the film went... What is more intense than Indian culture and food? A strong taste that will bring us closer to the dream of a trip ... So try to watch the movie with a delicious chicken curry and rice in front of you ...

We wish you to enjoy both of our proposals.

But Toula is looking for more in life. Her mother convinces Gus to let her take some computer classes at college (making him think it's his idea). With those classes under her belt, she then takes over her aunt's travel agency (again making her father think it's his idea). She meets Ian Miller, a high school English teacher, WASP, and dreamboat she had made a fool of herself over at the restaurant; they date secretly for a while before her family finds out. Gemista

The best Greek recipe with rice stuffing. Fasting food without meat suitable for Vegetarian and Vegans. You should try it!

Preparation Time: 20'

Cooking Time:90'

Serves: 6 portions

Recipe Ingredients:

  • 6 large tomatoes
  • 3 medium fresh eggplants
  • 3 green peppers
  • 1 zucchini coarsely ground
  • 12 tbsp. steaky rice
  • 2 chopped onions
  • 1 -1/3 cup olive oil
  • 1 small bunch of chopped parsley
  • 1 small bunch of fresh chopped mint
  • 1 tbsp. sugar
  • a pinch of cumin
  • salt
  • freshly ground pepper

Method:

  • For the most beautiful stuffed rice vegetables, wash all the vegetables and open them. Cut 1 slice of each tomato (to keep it together with the tomato we do not completely separate) and with a spoon we empty its crumb, taking care to leave some flesh in the peel so that they do not open later in the filling and baking. Keep the tomato crumb for the sauce. Grind it in a blender.
  • Sprinkle each tomato with a little salt and a little sugar. We turn them upside down on a tray, letting their liquids go.
  • Cut 1 slice from the top of the pepper and remove the seeds and their white part.
  • Cut 1 thin slice from the back of the eggplant so that they sit well in the pan.
  • We also remove a slice from the stalk and with a spoon, we empty its crumb and chop it finely. First, grind the tomato sauce in a blender. Keep 1/2 of the ground tomato for the end of the recipe.
  • In a deep frying pan, heat 1/2 cup. of the total olive oil and sauté the chopped onion for 2-3 ′. Add the zucchini and eggplant crumbs and sauté for 2-3 minutes, to wither, add the rice. Pour over 1/2 of the ground tomato and 1 tbsp. water. Add salt and pepper and simmer for 5 minutes. Remove the filling from the heat. Sprinkle with chopped herbs. The filling should be quite juicy when we fill the vegetables.
  • Fill each vegetable up to 3/4, because it will swell the rice by baking. Put the lids and place them in a deep pan, close to each other.
  • Ιn a bowl, whisk the remaining ground tomatoes with the remaining 1 cup olive oil. Add salt and pepper and pour over the pan with a spoon. Finally, add the sugar and sprinkle with the stuffing. Bake in a preheated oven at 180 ° C on the resistors, the first half-hour covered with kitchen foil. Then, remove and continue baking, which lasts a total of 1 hour and 15΄.

Serve hot or cold with Greek feta or yogurt!! They are amazing the next day at room temperature!
